What does Criollo quality mean when it comes to cocoa? There are several different types of cocoa beans (Theobroma cacao). The variety Theobroma cacao is called Criollo cacao, which accounts for 0.001% of the cocoa produced worldwide. Criollo quality cocoa beans are very aromatic, slightly bitter and of excellent quality, but despite this, only a few of the thousands of cocoa producers grow this endangered variety. The reason lies in the fact that the variety grown mainly in South America is very sensitive to temperature changes, requires a lot of care and yields little.
